Menu Plan Monday – July 6th

Finally…  A Menu Plan Monday!!!  It has been quite a while since I posted (or even PLANNED) a week’s menu.  We have a fully stocked freezer and pantry, so I’m on a mission to eat at home.  We all know having a game plan (aka: menu plan) helps.  Here is what we’re having this week:

Monday – Out for wings

Tuesday – Chicken Caesar Salads

Wednesday – Lasagna with Italian Sausage, Garlic Cheese Bread, Veggie

Thursday – Salmon, Rice-a-Roni, Veggie

Friday – Cubed Steaks marinated in Italian Dressing, Scalloped Potatoes, Veggie

Saturday –  Kielbasa Sausage, Savannah Red Rice from “The Best of Georgia Farms:  Cookbook and Tour Book”, Veggie

Sunday – BBQ Chicken Drumsticks, leftover Savannah Red Rice, Veggie

Menu Plan – In Reverse

I didn’t post (or really even plan) a Menu Plan for this past week.  Surprisingly, even without a written plan, we ate at home 4 out of 7 nights.  That’s good for us!  Since we were trying some new recipes, I decided to take pictures of our dinners…..

Monday – Mini Chicken Meatloaves, Oven Roasted Potatoes, Sugar Snap Peas

Tuesday – Crockpot Philly Cheesesteak Sandwiches, Cheesy Veggies, Green Beans

Wednesday – Proscuitto Stromboli, Sliced Cucumbers

After that is when the week fell apart….  Thursday – Pizza out with my parents, Friday – Endless fries at Ruby Tuesday, and Saturday – Loco’s with my husband’s parents (after Chuck E. Cheese!).  We did get our act together today.  I made Crockpot Mexican Breakfast Casserolefor brunch after church this morning.  And we had a frozen bag of Beef with Broccoli and a side of edamame for dinner.  We’ll see how this week goes!

Friday –  Fish tacos, Veggie

Saturday –  Crockpot Asian Peanut Butter Pork (again!  We LOVE it!), Rice, Veggie

Saturday – Nachos, Refried Beans

I finally got around to making Rachael Ray’s Sausage-and-Zucchini Rice tonight for dinner.  What?  I only scheduled it for last Saturday, March 7th on my Menu Plan Monday…  3 days behind?!?  That’s not so bad!!

This dish was AWESOME!  It didn’t take long to prepare, the chopping of ingredients was minimal,  and it was super flavorful.  My husband ate two bowls!  He said that it’s by far his favorite meal that I’ve made lately (that includes Slow Cooker Thai Chicken and Crock Pot Peanut Butter Asian Pork, both of which he really enjoyed).

I did make a few minor tweaks to the recipe….  I added mushrooms, I used more sausage and zucchini than called for, and I didn’t bother with the pine nuts. 

And the best part of the whole recipe?!?  The farmer’s market had zucchini for $0.49/ lb!!  Last week, it was $1.99/ lb at Kroger.  And I got to use a full carton of my stockpiled chicken broth!  It was a very successful meal……

I would say that our first week of Menu Plan Monday was a moderate success!  We ended up eating at home on Tuesday, Wednesday, Friday, and Sunday.  That’s not too bad!  We ended up going out to Pizza Night for my super-de-duper blog assistant’s preschool on Thursday and we ended up at a Daytona 500 party for dinner on Sunday.  But it’s ok, we adjusted…..  This week we will be eating:

Monday – Wings!

Tuesday – Out of town……

Wednesday – Tacos

Thursday – Lemon Pepper Chicken, Rice-a-Roni, Veggie

Friday – Homemade Pizza 

Saturday –  Cheesy Chicken & Rice Casserole

Sunday Brunch – Pancakes

Sunday – Italian Sausage w/ Tomato Sauce Sandwiches, Veggie

Slow Cooker Thai Chicken – Yummy!

It’s Wednesday…..  Do you know what that means?!?! 

We had Slow Cooker Thai Chicken for dinner!!

Wow, it was delicious!  Not to mention super easy to make!!  I dumped everything in the crock pot on my way out the door this morning and when I got home, it was all cooked and ready to go.  I only had to make some coconut rice and chop the peanuts and cilantro for the top.  My husband loved the flavors in this dish.  The only thing I would think about changing (because we will most definitely be having this again!) is the salsa I used.  I used HOT and I think next time I will use medium.  The sauce was delicious and very flavorful, but halfway through dinner the heat started getting to me.  My husband, the hot sauce lover, raved about it!

This is my first week participating in “Menu Plan Monday”!  I am super excited to see how we do eating at home this week.  We always do better about staying in when we have a plan in writing.  Here we go:

Monday – Out for Wings!  (What can I say?  It’s a family tradition…..)

Wednesday – Slow Cooker Thai Chicken from Betty Crocker, Coconut Rice, Veggie  

Thursday – Tilapia, Roasted Potatoes, Veggie

Friday – Homemade Pizza

Saturday – Dinner out for “Our Engagement Anniversary”  (My sneaky husband’s way of getting out of celebrating Valentine’s Day since he claims it’s a “made-up holiday”!)

Sunday – Lemon Pepper Chicken, Rice-a-Roni, Veggie
