Menu Plan – In Reverse

I didn’t post (or really even plan) a Menu Plan for this past week.  Surprisingly, even without a written plan, we ate at home 4 out of 7 nights.  That’s good for us!  Since we were trying some new recipes, I decided to take pictures of our dinners…..

Monday – Mini Chicken Meatloaves, Oven Roasted Potatoes, Sugar Snap Peas

Tuesday – Crockpot Philly Cheesesteak Sandwiches, Cheesy Veggies, Green Beans

After that is when the week fell apart….  Thursday – Pizza out with my parents, Friday – Endless fries at Ruby Tuesday, and Saturday – Loco’s with my husband’s parents (after Chuck E. Cheese!).  We did get our act together today.  I made Crockpot Mexican Breakfast Casserolefor brunch after church this morning.  And we had a frozen bag of Beef with Broccoli and a side of edamame for dinner.  We’ll see how this week goes!

Farmers Market Savings

I stopped by the Farmers Market by my office on Friday evening to grab a few things.  I needed a few fresh ingredients for the Lemon and Herb Crockpot Chicken that I was finally going to make on Saturday.  Here’s everything I got:

10 lbs of potatoes – $2.99
2 packs of strawberries – $0.79 each
5 pack of garlic – $0.50
2 lemons – $0.25 each
Fresh rosemary – $0.99

I spent $6.56 on everything pictured!

And here is a picture of the Lemon and Herb Crock Pot Chicken that I made for dinner on Saturday.  It had a great flavor (and the house smelled amazing!), but the chicken ended up a bit dry.  I think I cooked it a little longer than I should have.

Today after brunch my trusty blog assistant and I made Christy’s (again, of Southern Plate fame) Baby Boston Creme Pies.  They were good, but I think we definitely prefer the Doughnuts from a few weeks ago.  Here’s our process in pictures….

I finally got around to making Rachael Ray’s Sausage-and-Zucchini Rice tonight for dinner.  What?  I only scheduled it for last Saturday, March 7th on my Menu Plan Monday…  3 days behind?!?  That’s not so bad!!

This dish was AWESOME!  It didn’t take long to prepare, the chopping of ingredients was minimal,  and it was super flavorful.  My husband ate two bowls!  He said that it’s by far his favorite meal that I’ve made lately (that includes Slow Cooker Thai Chicken and Crock Pot Peanut Butter Asian Pork, both of which he really enjoyed).

I did make a few minor tweaks to the recipe….  I added mushrooms, I used more sausage and zucchini than called for, and I didn’t bother with the pine nuts. 

And the best part of the whole recipe?!?  The farmer’s market had zucchini for $0.49/ lb!!  Last week, it was $1.99/ lb at Kroger.  And I got to use a full carton of my stockpiled chicken broth!  It was a very successful meal……

After brunch today, my super-duper blog assistant (aka – my niece) and I made a batch of Christy Jordan’s (of Southern Plate fame) Cinnamon Sugar Doughnuts.  WOW!  They were delicious!!  They were so easy to make and they definitely melt in your mouth.  It makes me glad to have a canned biscuit stockpile!

Slow Cooker Thai Chicken – Yummy!

It’s Wednesday…..  Do you know what that means?!?! 

We had Slow Cooker Thai Chicken for dinner!!

Wow, it was delicious!  Not to mention super easy to make!!  I dumped everything in the crock pot on my way out the door this morning and when I got home, it was all cooked and ready to go.  I only had to make some coconut rice and chop the peanuts and cilantro for the top.  My husband loved the flavors in this dish.  The only thing I would think about changing (because we will most definitely be having this again!) is the salsa I used.  I used HOT and I think next time I will use medium.  The sauce was delicious and very flavorful, but halfway through dinner the heat started getting to me.  My husband, the hot sauce lover, raved about it!
